Spatlo or Kota is the Stuffed Bread of South Africa. It is also known as “hambone”. The origins of the Kota have deep roots in the apartheid-era migrant labor system and the backbone industry of mining, which led to millions of black laborers working in pitiful and near-slave conditions to unearth the deep reserves of gold in Gauteng that propped up the economy of the white minority regime.

The kota is made from a hollowed-out quarter loaf of bread and filled with various ingredients, often potato “slap” chips, sausage, egg, beef patty, cheese, polony, and achar. In townships, kotas are generally filled with slap chips and sausages such as viennas and sold for about R15. Last year’s Soweto Kota Fest proved that the South African street food favorite has gone to private school and now twangs.
